Oversee and coordinate the planning, organizing, training and leadership necessary to achieve stated objectives in sales, costs, marketing, employee retention, guest service and satisfaction, food & beverages quality, cleanliness and sanitation.
  
Requirements
  • Bachelors Degree preferred, in Hospitality, business, management or related. Or some college with experience equivalent
  • At least 3 years experience as a Food & Beverage Manager in a restaurant, hotel, country club, or venue (more than 3 years in management a plus!)

Job Overview - Multi-Functional Responsibilities
  • Manage labor to avoid overtime, penalties and cost overrun
  • Review P&L’s statements in all areas for accuracy for monthly Inventories or when the  company requires this to be done, to be deliver the same day to the GM for approval.
  • Hold Daily pre-shift meetings with staff and monthly meeting with all F & B Staff
  • Liaise between floor managers, kitchen manager, events manager, and GM as needed
  • Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards.
  • Control cash and other receipts by adhering to cash handling and reconciliation procedures in accordance with restaurant policies and procedures.
  • Make employment and termination decisions consistent with General Manager guidelines for approval or review.
  • Provide consistent, appropriate and constructive coaching to managers and hourly employees
  • Schedule labor as required by anticipated business activity while ensuring that all positions are staffed when and as needed and the labor cost objectives are met.
  • Understand completely all policies, procedures, standards, specifications, guidelines and training programs.
  • Exemplify the highest standards in: honesty, integrity, leadership, Cooperation, Communication, Sense of humor, Passion for guest service, Organization, Professionalism, sophistication. Ensure that all guests feel welcome and are given responsive, friendly and courteous service at all times.
  • Achieve company objectives in sales, service, quality, appearance of facility and sanitation and cleanliness through training of ambassadors and creating a positive, productive working environment cost control.
  • Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.
  • Fully understand and comply with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements. Comply with Serv safe certifications standard and up to date with the responsible vendor program.
  • Provide advice and suggestions to General Manager as needed.
  • Build and Improve SPH and incremental sales Upselling, suggestive Sells, Seasonal menus, promotions, etc.
  • Weekly schedule to be deliver on time
  • All orders to be submitted to the Purchase department every Sunday before 5pm using the Purchase Request form.
  • Keep Menus up to standard. (Clean, updated and in good conditions)
  • Help plan and implement all company Promotions, to include printing Promo materials, POS screens & Advertising
  • Coordinate all F&B issues with Corporate F&B Director
  • Utilize the Opening and Closing Checklists in all areas of operation
  • Ensure Steps of Service are followed in all service scenarios
  • Make sure that every shift is stocked ahead of time and set up for success
  • Manage time clock, Check in/out staff, verify all staff clock in and out properly;
  • Manage adequate stock of correct glassware, china, supplies, linen, according to established pars
  • Ensure guest satisfaction by visiting tables and developing relationships and regulars; Attend to all VIP guests
  • Address customer comments, questions, concerns, and objections with direct, accurate, professional, and timely responses.
  • Monitor proper and timely execution of side work duty sheets for dining room and server station areas
  • Execute deep cleaning schedule
  • Oversee dining reservations on OpenTable and ensure reservations are attended to with special care
  • Oversee proper execution of special events with events manager Ensure proper use of OpenTable for dining room mapping and seating chart, guest preference tracking
  • Ensure food allergy procedure is followed by staff
  • Regularly audit social review websites – OpenTable, TripAdvisor, Yelp, Facebook, and Twitter. Engage with guests who leave reviews
BAR
  • Ensure all recipes and specs are followed in drink preparation
  • Ensure staff prepares drinks using correct type of glassware
  • Make sure that every shift is stocked ahead of time and set up for success
  • Manage adequate stock of correct glassware and supplies, according to established pars
  • Ensure that bar top, bar back, and bar tables are kept clean and tidy throughout service
  • Execute deep cleaning schedule
  • Maintain organization of liquor, beer, and wine storage areas
  • Ensure security of all liquor product, all storage areas kept locked and keys given out by approval
  • Consumables and bar supplies order given to the KM by Sunday at 3:00 pm
  • Liquor, beer and wine order given to Purchasing Department by Friday 4:00 pm
  • Monitor invoices and communicate with Purchasing Department any price increases and discrepancies
  • Monitor the responsible serving of alcohol and administer effective guest intervention procedures as needed
  • Maintain a current responsible alcohol serving certification according to state regulations and ensure staff has certification
  • Follow cost control procedures such as monitoring staff pouring, accurate ringing of all items, complimentary drinks, theft, breakage, proper storage, waste, and product pars
  • Ensure POS screens are kept are up to date and accurate
  • Execute cocktail promos and specials
  • Follow approval process with Director of F&B and CHG Consulting for liquor, beer, and wine updates, changes, or needs
